The EASIEST, NO HASSLE recipe to cook FRESH PEPPERS and EGGPLANT. Spicy and DELICIOUS!

All you need for this recipe is a basket full of fresh spring and summer vegetables from the market. Things like peppers (the spicier the better!), eggplant, onions, garlic, mushrooms, zucchini. Basically anything you can roast. Chop them up, add some salt, olive oil, roast, and you’re done.

This is a SPICY CALABRIAN specialty, sometimes referred to as HOT CALABRESE APPETIZER, always delicious. You can dial in the heat by using less hot peppers or, if you want it hotter, finishing with hot calabrian chile oil.
