Why CAST IRON beats Pizza Stones | Thermal Conductivity | Surface Area

THIS IS FOOLPROOF!!! I haven’t had luck with pizza stones, but this works like magic!

On a whim, I decided to try to cook a Trader Joe’s pre-made pizza dough on a screaming hot cast iron pan, and it came out AMAZING! When I posted a picture to Instagram and Facebook, I got more engagement on a photo THAN I EVER HAVE!

So this time, I up the ante! I started with a homemade 72 hour fermented pizza dough, used the same technique, and wound up with something EVEN BETTER!

It comes down to THERMAL CONDUCTIVITY and SURFACE AREA. Cast iron is just superior in both ways when it comes down to what you can use at home.
