Ingredients:
1 medium to large zucchini grated
1 cup Kodiak Cakes Buttermilk Pancake Mix (or other brand)
1 Egg
1/2 cup milk
1-2 tbsp corn starch
2-3 leaves of basil, torn
3-4 zucchini flowers (OPTIONAL)
4-5 tbsp cooking oil

This is an easy zucchini fritters recipe that improves on my family’s recipe that has been passed down for generations. THEY WILL NOT BE HAPPY that I’m sharing their secrets and improving on one of their Italian recipes using Kodiak Cake Kodiak pancake mix. These squash fritters are basically zucchini pancakes and you can throw in the zucchini flowers (squash blossoms) or not. Crispy zucchini fritters are delicious and a perfect way to use some of the amazing summer vegetables that you’ll find at the grocery or in the garden!
