derryX Cooks: Chili Cheese derryX Dogs

Being on a high protein diet most of the time, I am a huge fan of the Family Pak that you can order from Falvo’s Meat Market in Slingerlands, NY. I only eat hot dogs once, maybe twice a year, so I’ve hit my yearly quota on how much hot dogs I can stomach in a given year, so I had no idea what to do with the hot dogs that come in the Family Pak.

Taking a page out of the books of my favorite hot dog eateries in the area, I decided to do a chili dog with cheese (no buns). I did it with no recipe, so I winged it with what I had in my freezer and pantry.

I diced and sauteed a small onion in a pot with about a tablespoon of olive oil (along with salt and pepper).

I added the ground chuck (also procured as part of the Family Pak from Falvo’s) to the pot, and browned the meat.

I added some spices (I don’t remember how much of each) and seasoned with salt and pepper. Then I added the beans (drained and copiously rinsed) and chicken broth (about 2/3 of the carton), and allowed this to cook down. (I also added about 1/2 tablespoon of my Ghost Chili sauce.)

While the meat sauce cooked down, I dealt with the hot dogs. I actually took the effort to split the hot dogs and cook them on a lightly oiled griddle.

I griddled these guys until there was some color on them.

I made a bunch of portions in my finest pieces of plasticware. I added four of my hot dog pieces, about 1/2 cup of the meat sauce, and a slice and a half of Monterey Joe Cheese.

    If I were you, i’d be pissed. Ballpark are the schlock’s of the hot dog world. They STHUK! But I can imagine your recipe being better with Nathan’s or Sabrett’s.
